Red Pepper Flakes is the Balkan version of paprika, but comes exclusively from a mix of peppers from the capsicm anum family. They are small hot cayenne peppers, which are used whole, dried or in vinegar, in the Chinese cuisine of Sichuan.
The spicy taste of Red Pepper Flakes is due to its seeds, which are not removed but dried as part of the mixture. Crushed red pepper shakers have become a standard on tables at Mediterranean restaurants and especially pizza parlors around the world. You can also use crushed red pepper to make chili oil by steeping the flakes in hot oil along with other spices like ginger and garlic.You can also make a decent hot sauce.
Red Pepper Flakes is used in sauerkraut, tripe, soups, boiled and grilled. It goes well with bean soup, it is also added to yellow cheeses and cold cuts for a more spicy taste.
Combines well with oregano, marjoram, basil, parsley, garlic and pepper.
