Enhanced Pesto Sauce
1/2 cup olive oil
1/3 cup pine nuts
1 pkg. Backyard Patch Pesto Blend
1 Tbls Lemon Juice
1/4 cup freshly grated Parmesan cheese
1 tsp. kosher salt

Combine Pesto Blend with lemon juice and let soak for 5 minutes. Add re-hydrated Pesto Blend, olive oil and pine nuts to blender (or food processor) and blend until it forms a paste, stopping as often as needed to push down ingredients. Add in Parmesan cheese and salt, blend until smooth. Transfer to bowl and serve tossed with pasta or as a bread spread.
