This cookbook was a 1956 wedding gift to my mother. She's gone now — but her recipes aren't.

Volume 11 returns to the Süßspeisen chapter — the puddings, strudel, and sweet dishes of a 1956 Bavarian kitchen. Volume 3 only sampled the chapter's opening pages; this second helping moves into its more involved territory. There's German French toast made from stale rolls, a hand-stretched apple strudel, the torn-and-caramelized Kaiserschmarrn, a true soufflé in Salzburger Nockerl, and molded sweets like chocolate flammery and wine jelly for a more formal evening.

Each of the ten recipes includes:
— The original German name and recipe number from the Bayerisches Kochbuch
— Two headnote paragraphs connecting the dish to its time and place and to my mother's kitchen
— A historical note on the original recipe and its place in mid-century German cooking
— Ingredients in US measurements (cups, tbsp, oz, lbs) with metric equivalents
— A clear, step-by-step method
— A "week built around this dish" grid — five days built around a single recipe, so nothing goes to waste

What's inside:
— Poor Knights, or German French Toast (Karthäuserklöße, or Arme Ritter) — Nr. 589
— German Pancakes (Pfannkuchen) — Nr. 597
— Kaiserschmarrn — Nr. 604
— Apple Strudel (Apfelstrudel) — Nr. 613
— Bread Pudding (Semmelauflauf) — Nr. 617
— Apple or Cherry Casserole (Apfel- oder Kirschenauflauf) — Nr. 623
— Salzburg Soufflé Dumplings (Salzburger Nockerl) — Nr. 637
— Apricot Meringue Bake (Aprikosenmeringenspeise) — Nr. 641
— Chocolate Flammery (Schokoladenflammerie) — Nr. 645
— Wine Jelly (Weingelee) — Nr. 649
